Sabzi Polo is a Persian cuisine, made of rice and aromatic herbs. This delicious food usually served with Caspian kutum in the north of Iran.

Sabzi Polo is one of the Persian foods, which is called polo because of the mix of rice and some green herbs. This delicious food served with Fish, meat, chicken, and shrimp. The aromatic herbs give a yummy taste to Sabzi polo. Moreover, it is one of the main dishes of Nowruz, Shab-e Yalda, and Chaharshanbe Suri. The Iranian serve Sabzi polo Mahi (fish) with Kuku sabzi in the first day of Nowruz, because it represents the greenness of nature in spring.

    To test this tasty food, you have to know about its recipes. The ingredients which you may need are as follows:
    • Herbs: Chives, parsley, dill, coriander, and a branch of fenugreek.
    • Other: Rice, fish, garlic, saffron, oil, salt, turmeric, and black pepper.

    Cooking Sabzi Polo consists some steps as follows:
     
    • First step: At first boil the water then add rice with a little salt, and oil. When the rice become parboiled, you have to rinse it.
       
    • Second step: At this step, you have to mix the rice with shredding herbs. To make a yummy Tahdig, Add a glass of oil and water in the pot, put it over the high heat then add a mix of rice and herbs. Wait for then minutes, then reduce the heat and cover the pot. Let it cook for about 45 minutes.
       
    • Third step: At this step you need to prepare the fried fish. First fillet the fishe, wash them and add some salt to it. Fry the slices of fish in hot oil and serve it with Sabzi polo.
