  • Ingredients of Ash Reshteh

    To test this delicious Ash, you have to know about its recipes. The ingredients which you may need are as follows:
    • Legumes: pinto bean, chickpea, lentil, navy bean.
    • Herbs: chives, coriander, parsley, dill, spinach, and chard.
    • Other: wheat flour, Reshteh, onion, dried mint, garlic, Kashk, turmeric, salt, and saffron. Moreover, some people served Ash Reshteh with vinegar.

 

  • Recipe of Ash Reshteh

    Cooking Ash Reshteh consists of four steps as follows:
     
    • First step: At the beginning of the cooking process, you have to know that the legumes caused tympanites. To avoid this problem, you can soak them in cold water for 24 hours and change the water two times. Pay attention to use an equal amount of legumes.
       
    • Second step: You have to fry some crushed cloves of garlic and chopped onion, then mix a little of them with the pinto bean, chickpea, navy bean, and water. Let them cook for about two hours, then add the lentil and shred of herbs to cook for about one hour.
       
    • Third step: At this step, you have to chop up the Reshteh and add it to the mixture of legumes and herbs and mix them, then cover the pot and let cook for about 45 minutes. To give a better taste, you can add some more fried onion and garlic to it. Adding two tablespoons of wheat flour makes your food thick.
       
    • Fourth step: Now you have to prepare fried mint; add oil to the pan and put it over the heat for about two minutes, then turn off the heat and add dried mint. This process avoids burning and having a bitter taste.
       
    • Final step: Now you can serve Ash Reshteh and design it with Kashk, saffron, fried mint, fried onion, and fried garlic.
