Kabab-e Barg meaning Fillet Kebab, a Persian style barbecued lamb, chicken or beef kebab is a delectable dish which the main ingredients of it are fillets of beef tenderloin, lamb shank, and less commonly chicken, along with onions and olive oil. It’s made by cutting the meat in strips and given a marinade in olive oil, garlic, saffron, onions, salt and black pepper. And then skewering and grilling and separately, skewering equal sized tomatoes and grilling on coal fire. It is usually served with rice or bread, sometimes seasoned with sumac. This way of serving refers to traditional Iranian cuisine which was highly based on proportion of food with flavor and digestion.
At Persian restaurants, the combination of one Kabab Barg and one Kabab koobideh is typically called “Soltani”, meaning "sultan's (meal)".
