Gaz is a Persian nougat and one of the yummiest souvenir of Isfahan Province.
Gaz is a kind of Iranian nougat that considered as the main souvenir of Isfahan. It is also produced in Hamedan, Chaharmahal and Bakhtiari, Kerman, Fars and Yazd Province. This yummy pastry dates back to the Safavid era, 450 years ago. Mohammad Ali Shekarchian was the first Gas producer in Isfahan Province.

Ingredients
Nectar of alhagi maurorum or Manna are the first ingredients to To prepare Gaz. Nectar of alhagi maurorum made the feeding of a small insect that lives on the leaves and stems of this shrub. It is like the process of honey production. Nowadays, the main ingredients of this pastry are as follows:
- Glucose, rose water, sugar, egg white, almond, pistachio, small slices of pussy willow. Honey, cotoneaster, and manna of Hedysarum are used instead of Nectar of alhagi maurorum.

Different Type of Gaz

- Gaz-e Loghmei: Gaz will be cut into some regular pieces after the ingredients have prepared, that is called as Gaz-e Loghmei.

- Gaz-e Sekkeh: It is prepared like Gaz-e Ardi but in small coin shape.
